My eldest and I had, for sometime, a compendious quest for the best Hainanese chicken rice version locally. The dish is one of our favorites to date. We've tried more than half of the local places that serves the aforementioned dish. A lot of them serves really good Hainanese chicken but none compared to Chef Stevie's.
Two years ago, I fortunately stumbled upon a blog post about this infamous Hainanese Chicken Rice. I hurriedly contacted the number given, made my inquiry about the said dish, and made my first order. Our orders are mostly for our family's consumption only (yeah, we're selfish that way) and my Dad-in-law's. His fondness for Chef Stevie's version is gearing towards addiction already. Yesterday, I picked-up one again just for him.
One order is composed of the Hainanese Chicken (tantalizingly arranged in an aluminum food container), the chicken rice, and the different sauces. It doesn't come with complimentary soup like the others though. It serves about five average eaters and two for certified gluttons such as yours truly.

Before we even took a taste of the dish, we knew that it was great because of its aroma. The intensity of the aroma of the Hainanese Chicken was heavenly and never fails to make my stomach churn!
The chicken is very moist, tender, and flavorful! Other variations tends to be bland and rely heavily on the add-ons (sauces) it comes with for enhancement. With Chef Stevie's version, you can do without all of those. You can experience great pleasure with just the chicken alone sans the sauces and the rice. Very good!
The rice, having absorbed the stock, has turned out truly flavorful. It is a wonderful accompaniment to the chicken and to any other viand you desire. We're always left with more Hainanese chicken than the rice. For those heavy on rice, I suggest you get an extra order.

I just mix all the sauces together and usually add a dollop more of the chili sauce for that extra kick. I also add in a stalk of coriander to my sauce. The burst of flavors (sweet, spicy, salty) are amazing! Just the right kind of every thing.
Aside from the Hainanese Chicken Rice, you can also give the Fresh Vietnamese Spring Rolls and the Fried Shrimp Lumpia with Bacon a try. The order should be placed a day in advance as per the Chef's request. The price is PhP 980 for the whole set of Hainanese Chicken Rice.
