This recipe looks very promising, and the photo looks very tempting. Braised-then-fried pork bellies covered with Drip maple! Nom! I'd probably substitute the Sichuan peppercorns with togarashi. The pork pieces skewered with matchsticks is a pretty nice touch, don't you think?
