Diamond Hotel's Corniche highlights homegrown cuisine in celebration of the Independence Day via the ingenuity and unquestionable talent of Ms. Dedet dela Fuente Santos along with the the hotel's outstanding chefs. The Feast from the Filipino Kitchen boasts of the best cuisines from different regions and Ms. Dedet's amazing stuffed lechon!
She's known for refashioning the lechon {roasted pig} into a much-raved gastronomic delight both locally and abroad! The lechon is not a de minimis commodity for Filipinos. It is a symbol of abundance and social position. It is the heart of a Filipino gathering. A feast is considered important when a glistening lechon is on the table. That's just the way it is for us, and I love it!

Nothing can make me happier than Filipino cuisine. Absolutely nothing! Diamond Hotel's effort in giving the Filipino cuisine importance is very much appreciated. Given the smorgasbord of cultural influences, the Pinoy cuisine is definitely interesting, bordering amazing. Yeah, I'm being biased about it, but what the heck. I love our food!
We were entertained! The first day of the Feast from the Filipino Kitchen was a cheerful celebration that included Philippine folk dance performances - Pandanggo, Bakya, and Bulaklakan. I'm ashamed to say that I'm clueless about the rest. Let's just fast forward to the food.
Pepita's Kitchen's Oxtail Marmalade with Chicharon is to-die-for!!! <-- because one exclamation point is never enough for this one.
My goal was to eat one, but then it's in my line of sight so I got one more; and then, I got another one because it'll be a while before I'll ever have one again. Guilt ensues followed by fear of death then euphoria. It has that effect.
Lechon bread
The ensalada station makes my mouth water until now. There's a variety of bagoong {shrimp paste}, tropical fruits, and vegetables for you to mix. I wanted to ditch the spoon and fork and use my hands instead when I saw the ensaladang mangga. Maybe put one leg up my chair just to get the feel of things. I'm classy like that.
As for the palayok {clay pot} dishes, I liked the Crab with Talangka Fat, Laing, and Kare-Kare.
Pepita's Kitchen's Greatest Hits

Alimango with Crab Fat Sauce
The main event! Lechon stuffed with Truffle Rice and Lechon stuffed with Sisig Rice!
Pepita's Kitchen's Super Suman and Bayanihan chocolate sculpture
Above is just a mere fraction of what they have at Corniche's Feast from the Filipino Kitchen. Aside from the delicious Filipino dishes, they have their buffet staple of sushi, sashimi, dim sum, and of course, their fantastic dessert station!
The Feast from the Filipino Kitchen will run from June 3 until June 14, 2015. Lunch is priced at PhP 2,150 nett and dinner is at PhP 2,550 nett.
