This hefty half wheel of emmental is imported from Switzerland along with the rest of the fine wines and cheese varieties at Marco Polo Ortigas Manila.
This is one of the best definitions of joy - raclette! Chef Rolf Jaeggi carefully preparing traditional Swiss dish of melted raclette over slices of pickled cucumber, pickled onions, and potatoes. Perfection!
The meal started off with this delicious plate of beef carpaccio with beef tartar, quail eggs, and mache leaves in lemon pepper marinade. It's paired with a glass of pleasantly light Fendant Blanc d'Amour 2014, Cave Valcombe.
I love the combination of flavors of this Swiss Barley Soup! The sliver of Viande des Grisons {air-dried beef} hitches on a good surge of flavor in every spoonful. A sip or two of Humagne Rouge 2013, Grand Metral makes it even more satisfying.
Just like the previous dish, this one boasts of a contrast in flavor. The rich tasting rosti potatoes creates a good balance with the lightly flavored and very tender Zürcher Geschnetzeltes {veal zurichoise}.
